Change...and food :)

I believe 2013 has a lot of change in store for not only me, but for many of the people around me.  

Jimmy and I came to a decision recently and it's definitely life changing.  It's a decision that is mostly mine, as it affects me the most.  Hubs is just my support system :)
This decision (which I probably won't reveal until I've told others that should know first-NO, I'm NOT pregnant either), will hopefully allow the hubs and I to better reach our goals for our future and our future as a family.  It's both exciting and terrifying.  

All that being said, there are a couple of new changes going on in the Godde household that I can tell you about.  

In my efforts to be more financially independent, I've started my own Scentsy Business.  Another "job",  you say? Yes.  So I will now be running my Dance Studio, running my Tastefully Simple business, and now Scentsy.  I do have a lot going on, but with the amount of time needed to run my Dance Studio, Direct Sales is a nice way to bring in some extra money that I can do on my own time.  

Jimmy is going back to school next month! I'm so proud of him.  It's been about 2 or 3 years since he ended his last Certificate program.  This time he will be doing another Certificate program (and possibly finish his AA-we'll see where he is in his career at the end of the semester).  This program will get him where he wants to be, now that he knows exactly (almost exactly) want he wants out of his career. 




As some of you know, I'm trying to eat healthier.  And I've never been a HUGE meat eater.  I like meat, don't get me wrong, but I think I like fruits and veggies just as much. And pasta.  Yum. 

So this past week I made Lasagna, Stew, Artichokes, zucchini, and buffalo cauliflower. Jimmy cooked one night, and one night we ate out :) 

The Lasagna I didn't have a recipe for, just years of watching my grandma make it.  But since hubs enjoyed it so much, next time I'm actually going to measure everything out and then post it on here :) 

The stew was a similar situation   I just threw in a whole bunch of veggies, stew meat, seasonings, and water into the crock pot and it was ready when we got home from work.  I think stew is great because you can pretty much use whatever you have on hand.  It's also a great way to use those veggies before they go bad!


I tried something new and made Artichokes in the crock pot for the first time.  Usually I steam them.  This time I cooked them with chicken broth and some seasonings.  I think this would have been really good had I come home when I planned to.  But I ended up arriving about 2 hours late and even though my crock pot automatically switches to the warm setting, the food does continue cooking.  So we ate BROWN artichokes.  they weren't burnt, just overdone mostly on the outside layers.  They were still pretty tasty, as we ate them right up.  I also made a Basil Pesto Mayo to go with it.  I just omitted the mustard as I didn't have any.  It was still delish. 


I made my absolute favorite fried zucchini, unlike anything you've ever had in a restaurant I promise.  I also learned how to make this from my grandma.  

Here is what I did: 
Slice up one zucchini into round, this slices

mix together 2-3 eggs and garlic salt to taste in one bowl. 

In another bowl, you'll need 1/2 cup of flour, adding more if necessary.  

One by one, dip the zucchini slices into the flour, then the egg mixture and set aside until you've coated all pieces.  

In a frying pan, fry zucchini (I usually fry 6-8 at a time) in olive oil. Fry until both sides are a golden brown.  Let drain on a paper towel covered plate and sprinkle with Parmesan cheese.  Let them cool slightly and enjoy!



In my last post, I talked about Spicy Cauliflower Bites.  Well I tried them, and yummy! 
You should know that I LOVE buffalo wings, and these are a nice alternative and nowhere near as heavy.  
I ended up using this recipe instead of the one I posted last week.
